I've never met a cake pop I didn't like. What's not to love? They are deliciously moist, easy to eat, and just plain adorable! I have eaten my fair share of cake pops but I had never actually made them until recently. Making and Introducing Food to Rhys!

Well folks, we have reached the point in time where we are starting to feed Rhys solids. There are so many different opinions about the right time to introduce solids to babies and I truly think it's a little different with every baby. We waited until a week before Rhys turned 6 months old to start introducing any foods other than breastmilk and the little bit of formula we are using to supplement at bedtime. I knew I wanted to wait until about 6 months to start introducing food to him.

Berry Pecan Baked Oatmeal

Baked oatmeal is totally underrated. It's so easy and yummy and just all around awesome. It can be a breakfast, snack, or dessert, and can easily be prepped ahead of time and heated up right before serving. Since making this, I have eaten it for breakfast in the morning....as an afternoon snack....and as an after dinner treat, topped with my favorite cashew milk ice cream. YUM!

I am so excited I could BURST!!

Today is the official launch of my new and improved website, business, and rebrand! This has felt like a long time coming. Chocolate Chip Cookie Dough Energy Bites

Did you eat raw cookie dough growing up? I did!! It's not like my parents encouraged me to eat cookie dough with raw egg, but a little sneak of cookie dough here and there never hurt anyone, right? I distinctly remember my freshman year of college I bought a roll of Tollhouse cookie dough and brought it back to my dorm room, with the sole intention of eating it raw straight from the tubeBecause that's what you do as a freshman in college, duh.

Vegan Broccoli "Cheddar" Soup

Soups are hands down my favorite thing to make. They are easy, can be packed with nourishing ingredients, and can develop a really deep, complex flavor. Oftentimes soup is better the second or third day once the flavors have had a chance to meld together. That is...if it lasts until the second or third day (insert gritted teeth emoji + upside down smile emoji).

Life with Rhys: Months 0-4

You guys. Rhys turned 4 months old on January 6th! He is 1/3 of a year old. HOW DID THIS HAPPEN?! I know they are supposed to grow and get bigger but oh my goodness, time is flying. He doesn't feel like a new, fragile baby anymore! I'm equal parts sad because part of me misses the squishy newborn stage, and equal parts excited because it's so much fun to see him grow and develop.

Healthy Thanksgiving Recipes + This Weekend At Macy's!

I'm still wrapping my head around the fact that Thanksgiving is next week! This year is FLYING. Thanksgiving is probably my favorite holiday. Scott and I usually get up early and either run in a Turkey Trot road race or do our own workout. We didn't sign up for an official race this year, so we will most likely be hitting up our local gym to get a little turkey day workout in by ourselves. After our workout, I'll be heading into the kitchen to whip up a few dishes to bring to my family's Thanksgiving dinner.

Spaghetti Squash with Cashew Kale Cream Sauce

This dish tastes incredibly comforting while still feeling light and fresh. If you have never made a cashew cream sauce before, DO IT. Seriously, it's life changing. Who needs dairy when you have cashews?! Plus it has kale in it, so you definitely know it's healthy ;)
