Toaster Pancakes with Sweet Avocado Cream

I need to ask you a serious question.

HOW is it already mid-August?! I know itโ€™s completely clichรฉ to say, but time is seriously flying. This year has especially gone by quickly. The first couple months after Rhys was born were a complete blur (hello major sleep deprivation) and since then the days and weeks seem to be passing by especially fast. I remember at this time last year I was super pregnant โ€“ pretty much in the waddle stage - and wondering how in the world I still had 3 more weeks until my due date. In a way it kind of feels like yesterday but at the same time, like another lifetime ago. And in a way, it was another lifetime ago. A life pre-baby. Sometimes itโ€™s hard to imagine there ever was such a life!

This time of year also makes me nostalgic because itโ€™s back to school time. Growing up, I always loved this time of year. Even though I LOVE summer and am always a little sad when I think about the end of summer nearing, there is just something special about the transition from summer to fall. Buying new school supplies, getting excited about seeing my friends at school every day, wearing a sweater again (but not a jacket yet!) โ€ฆ. all of those things. And even though no one in my house is physically going back to school this year, I can feel the energy in the air! Just walking into the grocery and seeing all the back to school stuff gets me weirdly excited. At the same time, Iโ€™m super thankful we still have a few years before Rhys starts school. Iโ€™m sure Iโ€™ll be a complete mess then haha. 

With each change of season, I like to take some time to reflect and refocus my personal and professional goals. Itโ€™s a good time for me to reset and really get back to balance. This season, one of my personal goals is to simplify. Itโ€™s actually something I have already been making progress on, but this season I want to continue to make things at home simple and efficient.

I go through periods where I am really into meal prepping, and periods where it just doesnโ€™t happen. I have never been one to spend hours on a Sunday prepping every meal for the week, but what I find works best for us is if I make a protein (baked tofu, seasoned beans, steamed lentils, etc.), healthy snacks, and some chopped veggies to have throughout the week. Since having Rhys, I find it is especially helpful. For me, itโ€™s the best of both worlds. It doesnโ€™t take long to prep, and still gives me some creative freedom with our weekday meals without having to make everything that day. 

This season, I want to kick things up a notch. One of the things I have been struggling with is breakfast. We have been doing more things in the mornings (story time at the library, meeting with friends, etc.) and I have limited time to get breakfast ready for Rhys and I before we need to head out the door. If you follow me on Instagram, you know how much we love pancakes for breakfast on the weekends. Lately we have been really into using Simple Mills Pancake & Waffle Mix as the base for our pancakes. Keeping things simple and efficientโ€ฆAND delicious. Win win! Have you tried Simple Mills yet? Iโ€™m seriously obsessed with all of their products. They have a line of crackers, cookies, and frostings in addition to their baking mixes which are all delicious. We are big fans over here! I love that Simple Mills Pancake & Waffle Mix is almond flour based and uses minimal yet wholesome, quality ingredients. Instead of just making a few at a time, I have been making the whole box on the weekend and freezing the leftovers for weekday breakfasts! The secret to delicious leftover pancakes (ainโ€™t nobody got time for soggy pancakes) is to pop them right into the toaster! They get warm and toasty โ€“ pretty much perfect! Remember how delicious frozen waffles and pancakes were when you were a kid? Think that BUT BETTER. Better tasting, better for your bod.

Toaster Pancakes with Sweet Avocado Cream

Ingredients

  • 1 box Simple Mills Pancake & Waffle Mix
  • 2 ripe avocados, pitted and seeded
  • 3 Tbsp pure maple syrup OR honey
  • 3 Tbsp fresh lemon OR lime juice
  • 1-2 Tbsp water (as needed for desired consistency)
  • Fresh fruit for topping (optional)

Instructions

  1. Cook pancakes on griddle or skillet according to the package.
  2. In a food processor combine avocados, maple syrup, and lemon juice, and pulse until super smooth and creamy. Add additional water if needed for desired consistency.
  3. Top with fresh fruit (I love bananas and fresh berries).
  4. Store leftovers in a freezer friendly container. Pop frozen pancakes into the toaster until warm and toasted to your preference.
  5.  Enjoy
